Ave del Paraíso originated in the family winery, which was built in the late 1970s and was traditionally used to make artisanal wines. With a great deal of effort and dedication, we have injected life back into the land and transformed part of the historic property into a charming microdistillery.
The gardens that were originally blanketed under a sea of weeds have become the perfect place to grow and harvest the most characteristic botanicals used to make our distilled creations. Additionally, the area used as a kitchen in the former winery has been transformed into a lab. We spent a great deal of time and effort installing the various devices needed for distillation.
